Beetroot red, identified with the code E162, is obtained from the beets we eat on our tables. These beets are called Beta vulgaris ruba in Latin.
After cleaning the beets, extracting the juice, they are concentrated and used as a colorant.
Beet root red contains two pigments called betanin (7595%) and vulgaxanthin (525%).
This water-soluble natural colorant gives foods an intense red color. The shade of red in liquids varies depending on pH. If the pH is between 4 and 5, it gives a light bluish red color, approaching blue at higher pHs, and turning yellowish brown at lower pHs. Beet root red gives best results between pH 4 and 7.
Beet root red is very sensitive to heat. Temperature, heat treatment time, light, pH and water activity of the finished product cause color loss.
Betanin is also resistant to oxidation, so ascorbic acid is used to slow down oxidation.
Beet root red, sold in powder and liquid forms, is used to color many different foods, from light red to bluish red tones.
