Determination of Olive Oil Acidity
Olive oil consists of the combination of glycerin and oleic acid substances. However, the oleic acid in this mixture is not completely mixed in the glycerin, some of it remains free. If the amount of oleic acid released is small, the oil will be beautiful and delicious. If the amount of acid is high, bitterness occurs in olive oil.
The degree of acidity is expressed as a percentage of the amount of oleic acid in every 100 grams of olive oil.

Reagents Required
30 grams of alcohol - ether mixture is put into the flask. 10 grams of olive oil is poured over the alcohol-ether mixture and mixed. The burette is filled with the solution solution. Titrate the yellow solution until it turns red. The titration process is finished when the color turns red.
The consumption in the burette is read. Consumption indicates the degree of acidity.
