Ascorbic acid is a water-soluble vitamin with many functions. Most animals and plants can produce their own vitamin C from glucose. Humans must obtain vitamin C from food, as some fruit bats and human-like primates cannot produce vitamin C.
All fresh vegetables, fruits and meats contain some vitamin C. However, since vitamin C is sensitive to heat, it quickly deteriorates during cooking.
Its density is 1.65 g/cm3, it melts at 189 o C and starts to decompose at 192 o C.
Usage areas:
Ascorbic acid is used as an antioxidant because it has the ability to trap oxygen. It is used to store oils and fatty foods for a long time, and to prevent darkening of white vegetables and fruits.
In addition, fruits that are quickly cooled and frozen lose their natural color and odor during thawing.
These drawbacks can be avoided by adding pure ascorbic acid to these fruits just before freezing. As a result of this process, oxygen is trapped by ascorbic acid and cannot make undesirable changes. Ascorbic acid is used as an antioxidant in fruits such as apricots, peaches, apples, grapes, bananas, pears and pineapples frozen in this way.
Apart from this, ascorbic acid is used in many preparations, for enriching foods and beverages with vitamins.
Vitamin C is highly stable during juice production in an acidic environment. This stability is strengthened by the action of citrate and flavonoids.
It is used as a reducing agent in meat products to reduce the nitrite concentration required for a good quality pink color and is also used in modern bread production.
